Apple Cinnamon Filled Puff Pastries

Makes 8 5″x5″ squares
Preparation
1 package Puff Pastry Dough (I use Zergu Ready to Use Puff Pastry Dough which has 8 5″x5″ squares)
2 apples, diced
1 tablespoon cinnamon
1 teaspoon cardamon
4 packets stevia
½ cup pecans, finely chopped
coconut oil spray

Using a cupcake baking pan spray with the coconut oil. Meanwhile preheat oven to bake 385 degrees. Mix the apples, cinnamon, cardamon, stevia, and pecans in a bowl. Press each puff pastry square firmly into the bottom of each cupcake baking position making a cup out of the pastry dough. Fill each with the apple mixture. Then close the pastry tops by pulling loose ends to center. Spray top of puff pastries again with coconut oil and allow to bake for 25-30 minutes or until golden brown. Remove from oven and serve with ice cream and strawberries.
