Homemade Choco Chip Oatmeal Cookies

Homemade Choco Chip Oatmeal Cookies

Makes 19-20 Cookies

Cookie Dough Preparation
1 cup all purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 cups old-fashioned oats
¼ cup coarsely chopped pecans
¼ cup coarsely chopped walnuts
1 stick (8 Tablespoons) room temp butter, unsalted
½ cup light brown sugar
½ cup granulated sugar
1 large egg
¼ cup maple syrup
½ teaspoon vanilla extract
1 cup semisweet chocolate chips (I liked to use ½ cup dark and ½ milk chocolate)

Preheat oven to 350 degrees. Sift the flour, baking soda, baking powder, and salt together. Then whisk in the pecans, walnuts, and oats.
In an electric or hand mixer, beat the butter until smooth. Add the brown and granulated sugar. Beat for an additional 30 seconds then add the egg and beat until well incorporated and smooth. Slowly drizzle the maple syrup and vanilla. Turn the mixer to the lowest setting and gradually add the dry ingredients until well combined. Then mix in the chocolate chips, being careful to not overmix.

Using a cookie sheet or well lined non stick cooking sheet drop evenly spaced dough balls about 1 inch in diameter onto the sheet. Make sure you have about 3 inches of space between the cookies. Press down on each ball to flatten a bit. Cook for about 10-12 minutes or until the cookies are golden brown.
