Brussel Sprouts and Onion Hash

Ingredients:
10 brussel sprouts
¼ medium onion
½ tablespoon olive oil
2-4 eggs (depending on servings desired)
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon turmeric
5-6 diced grape tomatoes

In a food processor process the brussel sprouts and the onion and set mixture aside. For half the mixture 2 eggs should be used so for the entire mixture 4 eggs would be used. In a medium heated pan add the olive oil. Add the brussel sprouts mixture and saute for 2-4 mins until brussel sprouts are soft. Create spaces in mixture and crack the eggs (depending on 2-4). Add salt, pepper, garlic powder. Put lid on top and cook turn heat to low. Cook for 5-6 more minutes until egg is cooked to desired consistency. Sprinkle with diced tomatoes and serve.
