Lemon Tomato Chicken

Serves 8-10
Chicken Preparation
4½-5 pounds chicken drumsticks
1 cup water
¾ teaspoon pepper
1 teaspoon salt
1 teaspoon garlic powder
1 small onion, diced
1½ teaspoons turmeric
2 tablespoons tomato paste
1 lemon, freshly squeezed

Place drumsticks in a colander and wash. Coat the chicken with the salt, pepper, and garlic powder and make sure it’s coated using hands. Place half the drumsticks in a medium heat pan and cover. Cook until browned on all sides (about 6 mins on each side). Remove from heat and do the same thing to the other half of the drumsticks. Add onion and allow to cook an additional 4-5 mins. Add turmeric and tomato paste. Add water and dilute the tomato paste by mixing in the water. Add lemon juice, salt, and pepper. Add the other half of the drumsticks back into the pan. Then add all the liquids that came off the first half of the chicken back into the pan. Bring to a boil and cover. Then turn on low heat. Allow to cook for 2-3 mins then place the chicken drumsticks in an 15-inch x 10-inch x 2-inch baking dish. Line the chicken in the dish and pour the liquid on top. Cover with foil. Place on the second rack from the bottom in a preheated 350 degree oven and bake for 45-50 mins.
