Tilapia Tacos

Serves 2
Preparation
½ – 1 pound of tilapia filets
½ tablespoon coconut oil
1 onion, diced
½ teaspoon minced garlic
½ red pepper, diced
Juice of 1 lime
½ teaspoon salt
½ teaspoon pepper
½ tablespoon sriracha
10 grape tomatoes, diced
2 corn cobs (prepare by grilling on grill), cut the corn from the cob
1 cup cabbage, chopped
½ cup cilantro, chopped
1 avocado, cubed
flour tortillas (I use mission carb balance flour tortillas)

Bring a medium size pan to medium heat and add coconut oil. Add onion, and garlic and saute until golden brown. Add tilapia and cook until they break apart. Add red peppers while breaking the tilapia apart with a wooden spoon while it cooks. Add lime, cilantro, sriracha, salt, and pepper. Add grilled corn. Allow mixture to cook additional few minutes then remove from heat to assemble.

Using the tortillas add a few spoonfuls of the mixture, top with cabbage, avocado, and tomatoes. Serve.
