Bison Burger Sliders with Cucumber Soy Salad

Serves 4
Burger Preparation
1 pound Ground Bison
1 small onion
1 large egg
1 teaspoon sriracha
¼ cup finely grated Parmesan cheese
1 jalapeno, minced
1 teaspoon turmeric
2 tablespoon ground almond flour
1 tablespoon mustard (I use beer mustard made by HT Traders)
1 tablespoon Worcestershire sauce
½ teaspoon salt
½ pepper

Place the bison in a large bowl. Separately grate the onion using a large grater. Try to remove excess liquid then add to bison mixture. Add to meat and mix. Add all remaining ingredients and mix well. It’s best to use hands here to make sure it’s well incorporated. Make mixture into a ball and place in a covered bowl. Let sit in refrigerator for 2 hours. Remove from refrigerator and make into small patties about the size of your slider buns. Spray a non stick skillet with coconut oil and place patties in pan. Cook on medium heat until browned then flip. (About 5-6 mins on each side). Remove from heat. (If you desire a more well done burger you can also put it in the oven on 350 degrees F for a few minutes at the end to cook the burger all the way through).

Pickled Onions Preparation
1 small onion, halved lengthwise and cut into thin strips
¼ cup apple cider vinegar
¼ cup balsamic vinegar
¼ cup stevia sugar

Add onions to a small pan over medium heat. Add sugar, vinegars, and continue to cook over medium heat, stirring, until sugar is dissolved. Continue to do this until onions are softened and most of the liquid is dissolved. Then allow to cool.

Cucumber Salad with Toasted Pine Nuts, Sesame and Soy
4 mini seedless cucumbers, slivered thinly (I use a mandolin to get an even cut)
½ tablespoon black sesame seeds
¼ cup pine nuts
¼ cup soy sauce (I use the low sodium)

Bring a medium pan to low heat and lightly toast the pine nuts until golden brown. Remove from heat and toss with cucumbers, sesame seeds, and soy sauce and prepare for serving.

Pepper Jack Cheese (cut into quarters), optional
baby dills for garnish
Slider buns

Place slider buns in a 350 degree oven, flat side down, for about 2-3 minutes or until lightly crisped (add the pepper jack cheese at this point if desired. You may want to put a piece of foil beneath the buns in case the cheese melts on the oven). Remove from oven. Top with a burger, pickled onions, a dollop of spicy pickled remoulade from Recipe 74, and the top of the bun. Use a toothpick to place a baby dill on the top of the bun for garnish. Serve with cucumber salad.
