Sosis Bandari Sandaveeg(Persian Style Hot Dog and Potato Sandwich)
Makes 42 egg rolls
1 package jumbo wieners (any brand can be used and sausage can also be substituted), sliced into ½ inch rounds
1 large potato, peeled and cubed
1 small onion, peeled and diced
½ Tablespoon vegetable oil (or coconut oil for substitute)
1 teaspoon salt
½ teaspoon pepper
1 teaspoon turmeric
½ teaspoon chili powder
1 6oz can tomato paste
12 oz water
½ cup scallions, chopped
½ cup flat leaf parsley, washed and chopped, optional for sandwich
Sliced tomatoes, optional for sandwich
Sliced pickles, (gherkin or Persian style) optional for sandwich
Arugula, optional for sandwich
French Bread with insides removed (any bread of choice can be used for sandwich)
Heat oil in a medium pan on low/medium heat. Add cubed potatoes and cook, stirring occasionally, until lightly softened. During this process it’s best to keep the lid on the pan to make sure to evenly cook the potatoes. Once lightly browned/softened add the onions. Cook an additional 3 mins until onions are a bit translucent then add the hot dogs. Allow to cook for another 4-5 mins or until hot dogs are lightly browned in mixture. Add salt, pepper, turmeric, and chili powder. Mix well then add tomato paste and water. Bring mixture to boiling. Add the scallions, then lower heat and let simmer until mixture is reduced to a thicker paste. Will need to mix the mixture to make sure all the water is well incorporate with the tomato paste. Once mixture has thickened remove from heat and allow to cool. Assemble the sandwich with the bread, tomatoes, pickles, arugula and mayo if desired. Then add the cooked hot dog mixture on top and serve!
