BBQ Chicken Wontons
Makes 40-50 wontons
BBQ Chicken Preparation
1½ pounds of boneless skinless chicken thighs
1½ cups Honey BBQ Sauce (or any alternative BBQ sauce is fine. I prefer Sweet Baby Ray’s Honey BBQ Sauce)
1½ cups water
1 Tablespoon Sriracha, optional
1 teaspoon salt
1 teaspoon pepper
Place chicken thighs in a crock pot on high heat. Add the BBQ Sauce, water, salt, pepper, sriracha. Place lid on crock pot and let cook in crock pot for about 4 hours or until chicken is well cooked and well coated with sauce. Remove and once the chicken has cooled shred the meat, reserve the liquid for later use. Shred it finely and into small pieces. Use about 2 cups of the reserved liquid to pour the meat back into. Refrigerate to allow the meat to soak in the liquid again.
Wonton Filling Preparation
4 stalks celery, minced
1 cup carrots matchsticks, minced
prepared BBQ chicken
1 package wonton wrappers
Mix all the ingredients together. Spray a baking dish with non-stick spray and preheat oven according to wonton package directions. Using the directions practice how to wrap the wontons. You can use either water or egg wash to seal the wontons. Fill each wrapper with about ½ a Tablespoon of filling. Rub all edges with the water or egg wash and wrap. Place on baking sheet and bake according to wrapper directions.
Remove from heat and serve with any dipping sauce.
