Spinach Egg Soufflé

Serves 2-4

Soufflé Topping
4 pieces of a cauliflower head
½ cup Parmesan cheese

Place both items in a food processor and process until consistency is that of bread crumbs. Set aside to use as topper.

Egg Batter
4 eggs
1 cup egg whites
1 cup chopped spinach
½ cup diced tomatoes
½ teaspoon salt
½ teaspoon pepper

In a mixing bowl whisk the egg and egg whites until smooth. Add remaining ingredients and whisk a few more times.

Assembly
4 ramekins
nonstick pan spray
1 cup non fat cheddar cheese

Spray ramekins with spray and fully coat. Pour half the egg mixture in the ramekin. Add a sprinkle of the cheese. Pour additional egg mixture to fill ramekin. Add the cau
