Pomegranate Quince Fruit Roll-up (Lavashak)

Serves 2
Juice Pomegranates
2-3 pomegranates peeled and seeded (makes about 1.5 cups of pomegranate juice, or you could use store bought pom juice but it contains a lot of sugar)

2 small quince, peeled and cubed
2 tablespoons lemon juice
1 orange zest
2 cardamon pods

To juice the pomegranate seeds place in a food processor and blend shortly. You’re not going to puree it in the processor only blend it a couple times to release the juice from the seeds. Pour into a small holed colander and press into a small bowl. You will squeeze out all the juice from the seeds. Once juice is all removed pour into a medium saucepan. Add quince and lemon juice and bring mixture to a boil. Then simmer for about 30 mins. Remove from heat and using a hand blender mix ingredients until smooth. Line a cookie sheet with a silpat (I prefer to use a silpat over parchment paper because it is less likely to stick) and pour the mixture on the silpat. Spread the mixture evenly over entire silpat until covered in a thin layer. Pre-heat oven to 175 degrees and place in oven for 70-90 mins. If you can leave it in the sunlight for a few days that works equally as well. It should have a rubbery leather feeling when removed from the heat.

Cut into strips and serve
