Mango Fruit Roll-up

Juice Mangos
3 mangoes, peeled

Place the mangoes in a food processor or Vitamix and blend until smooth. Line a cookie sheet with a silpat (I prefer to use a silpat over parchment paper because it is less likely to stick) and pour the mixture on the silpat. Spread the mixture evenly over entire silpat until covered in a thin layer. Pre-heat oven to 175 degrees and place in oven for 70-90 mins. If you can leave it in the sunlight for a few days that works equally as well. It should have a rubbery leather feeling when removed from the heat.
