Easy Egg Wrap

Serves 2
Preparation
½ tablespoon olive oil
½ cup spinach, chipped
½ cup crumbled feta (or I used French Valbreso Cheese)
1 cup chopped tomatoes
2 eggs
¼ cup egg whites
¼ teaspoon salt
¼ pepper
2 mission carb balance tortillas
1 avocado, sliced
sriracha (to taste)

In a large pan add olive oil and bring heat to medium. Add tomatoes and cook about 2 mins. Separately whisk eggs and egg whites until smooth and add to tomatoes in the pan. Bring heat to low and add salt and pepper. Cook about 3-5 minutes mixing frequently to make the eggs scrambled. Remove from heat. To assemble heat the tortillas in the microwave for about 45 seconds. Add spinach, cheese, eggs mixture, and wrap. Serve with avocado and sriracha.
